When I was growing up, one of my favorite recipes as a kid was Asparagus crepes. It was always a special treat when she made the crepes because it was not very often. The reason is the crepes take a lot of time and patience to make which is something a lot single moms don’t have. (The time, not the patience…I think they all learn to have that sooner or later). I asked my mom where she got the recipe and all she could remember was that it was from some magazine over 35 years ago.
If any one knows which one, I would love to know! We always used canned asparagus of the longer variety. She used just the tips, not tips and stalks. I am sure you can use them as well, but the recipe will not come out as “pretty”.

- 2 eggs
- ½ c milk
- ½ c water
- 2 T butter, melted
- 1 c unsifted flour
- ½ t salt
- 2 cans of asparagus, long-stemmed with tips, drained (but any kind will do)
- Double Hollandaise Sauce recipe
- Place all ingredients in a blender container
- Cover and blend until smooth
- Let batter rest at room temp for one hour
- Wipe a non-stick skillet with butter on a paper towel
- Heat pan to med-high heat
- Pour 2 T of batter in the pan, tilting until the bottom is covered
- Cook until golden brown and dry in the middle
- Turn and cook briefly on the other side
- Cool on cake rack before stacking
- Preheat oven to 350
- Place 2-3 whole asparagus lengthwise in the crepes
- Add 1 T Hollandaise Sauce
- Roll up and place in a greased 13 x 9 baking dish
- Cover with foil and bake in preheated oven for 10 minutes or until warmed
- Top with remaining warm sauce before serving
