Avocado Chocolate Chip Cookies

Ingredients
  • 2½ cup flour
  • 1 t pink salt
  • 1 t baking soda
  • 1 t baking powder
  • 2 c semi-sweet chocolate chips
  • ½ c butter
  • 1 mashed avocado (not the Haas one)
  • ¾ c brown sugar
  • ¾ c sugar in the raw
  • 2 eggs
  • 1 t pure vanilla extract
  • ½ t nutmeg
Instructions
  1. Preaheat oven to 350 degrees
  2. Using the Good Cook ProFreshional Avocado Slicer, remove the meat from the avocado and mash
  3. Add butter and sugar to the mashed avocado and mix in a food processor or blender until creamed
  4. Add vanilla
  5. Mix in the eggs one at a time
  6. In a separate bowl sift the remaining ingredients
  7. Add the dry mix to the wet a a little at a time until combined well
  8. Mix in the chocolate chips (feel free to add in nuts as well
  9. Put the dough in a tupperware container in the fridge for 1-3 hours to harden (the mix is really soupy)
  10. Using a spoon, scoop out 1 inch balls on to a greased cookie sheet or one lined with parchment paper. The shape of the ball with be the shape of the cookie so if you want them flatten, mash with a spoon
  11. Bake 10 minutes or until golden brown on top

  1. I tried making the avocado chocolate chip cookies . The dough is not runny. Do I need to refrigerate before cooking

I’ve seen avocado slicers in the grocery store and always wondered about them as I use tons of avocados. I never thought to put them in chocolate chip cookies though. I like cookies. I like avocados.   4. I bet they are delicious and so very moist. Avocado is one strange thing for me. I love it now, but as a Kid wouldn’t touch it. Now it is so tasty for me to add to sandwiches and other recipes. I have one at home right now. Maybe I can turn it into these!
