Bertolli SoupsI love to cook, but there are night that either I just don’t feel like it, or we’re so busy that we need something quick!  My son really loves soup, so I always have several different kinds on hand for those nights where I just don’t feel like dirtying a bunch of pots and pans.  What we’ve found, though, is that canned soups lack in flavor and most have a ton of sodium.  They’re not all that great for us.  That’s why I was excited to try a  Bertolli Meal Soup.  They’re flash frozen instead of canned, which really preserves the flavor, texture, and nutrients.  We were excited to try this, but we first had to agree on a flavor.  Now, my son and I have very different tastes in food, so I think this was the most difficult part of the meal!  The Roasted Chicken and Rotini Pasta was the one my son wanted, but I don’t do beans (ever) so we settled on the Chicken Minestrone.

When it came time to prepare our dinner, I couldn’t believe how simple it was!  We just dumped the contents of the bag in a pot, added water, covered and simmered for a bit!  What I loved was that each item was frozen separately instead of just a big chunk.  This meant that next time we could get the Roasted Chicken and Rotini Pasta and I could simply remove the beans before heating, cook them in a separate pot and re-add them to my son’s portion!  How nice!  I let my son choose sides, so he picked some take n’ bake bread sticks we had in the fridge.  While the soup was simmering, we heated the bread sticks.  In less than 15 minutes, our entire meal was complete!  We brushed a little melted butter on the bread sticks and sprinkled some garlic powder, and we were ready for an outstanding meal! It sure made our average weeknight a Special night. We spent time together and played games.

I felt as though we were eating out at a restaurant!  The soup was hearty and flavorful, with huge chunks of chicken in it, and the vegetables were full of flavor!  Combined with the bread sticks, this was the perfect meal.  It was so easy to make, and it really felt as though I was eating homemade soup instead of store bought.  With alternate microwave directions, it’s even easy enough for my son to make himself, for those night where I might be home a little later.  This will definitely be a freezer staple in my house!
