With Caitlin taking her lunch to school every day, I want to find the best healthy lunches for kids. We check the online menu for school each Sunday to know what the school is serving and what she will want to eat. I know the kids lunches are getting better in the school cafeterias, but I don’t think they are nearly as healthy and tasty as they would if made from home. The thing for our family is my lack of creativity makes Caitlin almost wanting to eat the school lunch instead of carrying another one of my turkey wrapped sandwiches and baked chips. Chicken Salad: There are a lot of great recipes out there for chicken salad. One of my favorites that are also really healthy is using fat free mayo, red grapes and small pieces of pecans. Caitlin loves this dish and if you serve it with a side of fruit salad, you have got a tasty and nutritious meal.
Turkey Meatballs: Caitlin LOVES meatballs and she especially loves turkey, so put them together and it is a home run. If you serve this in a pita, it keeps it all together and neat. Serve with a side of cucumber and tomato salad and you are good to go.
Drumsticks: Kids love drumsticks and they are easy to make and transport well. Caitlin really loves the grilled flavor, so Chris will cook them on the grill in a big bunch, so we have enough to eat for a few days.
Containers: Another important part of taking a healthy lunch to school is to be sure it is packed correctly. If you toss everything together willy nilly, you won’t have a very pretty lunch to look forward to.
