My kids are huge fan of chia bars. Ever since we had the Chia bars from Health Warrior, they are asked for on a regular basis! I knew that Health Warrior also sold Chia seeds in bulk. They come in black and the white variety. I wanted to make a blonde bar, so I chose the White Chia Seeds for this recipe. Chia, the powerfully nutrient dense food, is rich in Omega-3 fatty acids, antioxidants, fiber, and many important minerals. If you mix water with the Chia seed, it forms a gel coating in your stomach, which slows down the process of turning carbs into sugar. This also makes for the perfect bar ingredient!
