Buttermilk Egglets

This is an easy finger food for breakfast that can have a variety of different fillings.
Ingredients
- 6 Large Buttermilk Biscuits
- 2 cups shredded cheese
- 4 eggs
- ⅔ cup buttermilk
- 1 t salt
- ½ t black pepper
- ½ t paprika
- 4 green onions
- ½ cup broccoli
- 6 cherry tomatoes
- ¼ cup mushrooms
Instructions
- Preheat oven to 350 degrees
- Divide biscuits in half placing each half at the bottom of a muffin tin
- Bake 14 minutes
- Cool and then press biscuits down to make room for the rest of the ingredients
- Beat eggs, buttermilk, salt, pepper, paprika, onions and broccoli.
- Pour egg mixture over biscuits and top with cheese.
- Add tomato
- Top with more cheese
- Bake 24 minutes or until eggs are set
- After you take the egglets out of the oven, push the melted cheese bake to take its form so it will cool neatly
