Carrot Chips Recipe
- Carrots – I used baby because it was what I had on hand.
- Garlic powder
- Sea Salt
- Seasoning salt
This picture is to show you what one baby carrot yields. Not much, so I started slicing them four at a time length-wise on my mandolin at 1/16 of an inch. If you do not have a mandolin, you can use a razor or a very sharp knife.
After (and while) you are slicing, place the carrots in a bowl of water to soak with garlic powder and Sea Salt. I let mine soak until I was done with slicing all the carrots in the bag.
Take the carrots from the water and press them in between two paper towel to rid the excess water. Now with potatoes and other starchy veggies you need to lay the slices out so they will not stick, but with carrots (after trial and error), I found out that is not necessary and you can just kind of scatter them on a paper towel. Sprinkle with Seasoning Salt of choice. Microwave on high for 3 minutes, then toss around and microwave for 4 more minutes on 50% power. If you want them a little crispier, you can increase the time in 30 seconds increments at 1/2 power. These carrot chips are great as a healthy salad topper and even great plain. The garlic soak in the beginning adds a flavorful undertone to the final product.
