Chocolate Crumble Cake

Ingredients:

For Crumble

  • 1/3 cup Flour
  • 1 tablespoon Cocoa Powder
  • 2 tablespoons Granulated Sugar
  • ½ teaspoon Cinnamon Powder
  • 2 tablespoons Butter

For Cake

  • 2 Egg Yolks
  • 2 Egg Whites
  • 2 tablespoons Granulated Sugar
  • 2 oz Chocolate Bar
  • 1 tablespoon Cocoa Powder
  • 2 tablespoons Flour
  • 3 tablespoons Butter
  • 4 tablespoons Heavy Whipping Cream
  • 1 Banana, mashed

Directions:

  1. Make crumble. In a bowl, combine 1/3 cup flour, 1 tablespoon cocoa powder, 2 tablespoons granulated sugar, 1/2 teaspoon cinnamon powder and 2 tablespoons butter. Mix well until crumbly. Refrigerate until ready to use.
  2. Preheat the oven to 350 degrees F. Butter and flour 6 inch cake pan.
  3. Chop 2 oz chocolate bar into uniform pieces. Put chocolate and 3 tablespoon butter in a bowl. Heat in a microwave for 1 minute. Stir well until melted. Then add egg yolks and 2 tablespoons granulated sugar. Mix well. Add mashed banana, heavy whipping cream and 2 tablespoons flour. Mix well.
  4. In another bowl, whip egg whites until stiff peaks are just about to form. Then add to the chocolate bowl dividing 2-3 times. Mix gently.
  5. Pour the batter into the cake panTake the crumble out of the refrigerator and sprinkle on top. Bake for 30 minutes. Let cool. Then refrigerate for 1-2 hours.
