I am going to tell you a hugely embarrassing secret. I gained over 15 pounds over the holidays. I did a ton of baking for the kids and for school events, and of course I had to taste test everything I made. We also did a lot of cooking those large holiday meals with the rich and delicious sides. As yummy as everything was, I am totally paying the price now that the new year has arrived. The only I can do now is suck it up and get back to a healthy way of eating. This means no fast food meals and cooking healthy dishes at home.
Before I start my menu planning for the healthy direction I am taking, I needed a few supplies. I love to shop with Kohl’s because they have such a huge variety of high quality items from brands I trust. They are affordable, the selection is always great and I earn Kohl’s cash when I shop. This helps me save even more, and being a one income family, that is important to me. So, when it comes to finding the best cooking accessories I need, I turn to brands I love and trust like Bobby Flay, Rachael Ray, Oster, Cuisinart and more.
My husband and I had the most fun shopping for our cooking goodies at Kohl’s. We were able to shop without the kids, so we made a date of it, which was a lot of fun. We were able to take the time to really look at all the options and decide what worked best for us. One of my favorite new kitchen items is my Bobby Flay round casserole, which was perfect for making my Easy Roast Chicken Recipe. I also grabbed the Bobby Flay measuring cups and spoon set because I have an old and incomplete set I have struggled with for a few years now. I also got myself a new Oster blender to make my favorite chocolate banana smoothie, which is a great way to start my day. The recipe is super easy! It is one chocolate Greek yogurt, one banana and one cup of skim milk! Easy peasy right?

Easy Roast Chicken Recipe:
- 1 Whole chicken, broken down, 8 thighs or 4 breasts
- 2 tbsp soy sauce
- 2 tbsp red wine vinegar
- 1 tbsp brown sugar
- 3 tbsp olive oil
- 4 green onion, chopped
- 2 cloves of minced garlic
- 1 red pepper, sliced
- 1 package fresh green beans
- salt and pepper
- 1 package brown rice
- Preheat oven to 400
- in a baking pan (I used my Bobby Flay casserole dish from Kohl's), mix together everything but chicken and vegetables
- Add chicken and green beans and coat with mixture.
- Top chicken with sliced red pepper
- Cook for 30 minutes, baste and flip chicken and cook for 30 minutes
- Serve over brown rice
