Breakfast Energy Muffins Recipe

This recipe is chock full of yummy goodness to give you a boost of energy to start your day.
Ingredients
  • 2 cups whole wheat flour
  • 1 cup brown sugar
  • 2 t baking powder
  • 1 t Kosher salt
  • 2 eggs
  • ⅛ t cinnamon
  • ¼ cup dried cranberries
  • ⅛ cup almonds
  • ⅛ cup walnuts
  • ⅛ cup flax or pumpkin seeds
  • 1 cup Almond Milk
  • i t vanilla extract
Instructions
  1. sift flour, salt, brown sugar, cinnamon and baking powder together, set aside
  2. Beat eggs
  3. Add almond milk and vanilla
  4. Mix by hand until all ingredients are wet
  5. add remaining ingredients
  6. spoon into muffin tins about ¼ from the top
  7. Bake 20 minutes at 250 degrees or until center comes clean when poked with a toothpick
