Mediterranean Casserole Recipe
  • Use the white roux made with Country Crock Spread
  • 8 oz rotini pasta, cooked and drained
  • 2 c diced ham, cooked
  • 1 package of frozen leaf spinach, defrosted and drained
  • ½ c sliced assorted olives
  • 2 cups cheddar cheese
  • ¼ cup feta
  1. Preheat the oven to 400 degrees
  2. Create the Roux and add the cheddar cheese
  3. Combine the ham, rotini, and olives in a separate casserole dish
  4. Add the roux to the casserole dish and stir
  5. Top with feta cheese
  6. Bake for 30 minutes
