Basic Hollandaise Sauce Recipe
  • 2 egg yolks
  • 3 T lemon juice
  • ½ cup butter
  1. Stir egg yolks and lemon juice vigorously in a 1 quart saucepan with a wooden spoon
  2. Add ¼ cup butter
  3. Heat over low heat, stirring constantly until butter is melted and sauce thickens
  4. Make sure you melt the butter slowly or it will cook and curdle the eggs.
