Cheese Blintzes Recipe

Ingredients
  • 1.5 c flour
  • t salt
  • ¼ c water
  • 4 eggs
  • 1 c milk
  • 1 lb ricotta cheese
  • 1 egg
  • ¼ c sugar
  • Carbonell Fantastically Light Extra Light Olive Oil for frying
  • Sour cream for garnish
Instructions
  1. Combine 1 egg with the ricotta cheese and sugar, set aside
  2. Stir flour and salt together
  3. Add water and beat until smooth
  4. Add eggs and milk and beat until smooth
  5. Put a small amount of Carbonell Fantastically Light Extra Light Olive Oil in a 6 or 7 inch skillet
  6. Pour in ¼ c batter and tilt to distribute over the whole pan
  7. Heat until browned on bottom and set on top
  8. Put 1 rounded T of filling in each and fold in ends
  9. Brown on both sides, sealing the seams with Carbonell Fantastically Light Extra Light Olive Oil
  10. Serve hot with sour cream
