  • Egg Whites
  • Mushrooms
  • Red Pepper
  • Red Onion
  • Spinach
  • Low Fat Cheese (optional)
  1. Preheat oven to 400 degrees
  2. Dice vegetables and set aside
  3. Pour egg whites into muffin tins (I use silicone muffin cups). Fill ¼ of the way
  4. Add a small amount of veggies
  5. Add cheese (optional)
  6. Pour more egg whites but leave enough room to top with a sprinkle of more veggies
  7. Bake for 12-16 minutes or until firm
  8. Allow to cool for 5 minutes and serve
