Spinach Tomato And Bacon Frittata Recipe

  • 1 pound cooked bacon (I used turkey)
  • 4 ounces fresh spinach
  • ¼ cup halved cherry tomatoes
  • 15 medium eggs
  • 1 tlbs. sea or kosher salt
  • 1 tsp. freshly ground pepper
  • 2 cups shredded Swiss or white cheddar cheese
  1. Preheat oven to 400 degrees,
  2. Fry or microwave your bacon, drain and set aside (I use turkey bacon)
  3. Spray pan with cooking oil and cook spinach and tomatoes until spinach wilts
  4. In a bowl, scramble eggs and season with salt and pepper
  5. Add eggs to pan with spinach and tomatoes
  6. Sprinkle cheese over mixture
  7. Crumble bacon and sprinkle on top of cheese
  8. Place pan in oven and cook for 30-45 minutes.
  9. Take out, let cool for 10 minutes and cut into slices
