Back To School Breakfast In Under 5 Minutes #TeamEggs

Everyone is rushing around trying to get ready for their day. No one wants to be late and we all have to work around one another. Sometimes this can propose quite a challenge. My husband has to get up, dressed and ready to go to school. It has been 20 years since he has been in school, so it is quite the change for him. Taking kids to school is also a huge change. You have to coordinate drop off times with school bus pick-up times and figure out how to make it where you need to go without being late. I wake up with the whole gang to assist as much as I can. I am lucky I work from home so I do not have the same rush to be somewhere as everyone else. This also means I get to make sure my family starts the day with a high-quality, nutritious breakfast. Did you know eggs are one of the most affordable sources of high-quality protein per serving? Protein helps makes sure you have enough antibodies to help us fight those back-to-school infections. It is also needed to build muscle tissue. We all know we need muscle tissue to keep our bodies active and strong.

The American Egg Board proposed a challenge to me and a few other bloggers to replace our cereal with eggs for ten days. They even gave us a few recipes to try that take only a few minutes to prepare and are under $1.99 per serving. Since they are prepared in the microwave, you do not even have the mess of dirty dishes to clean up! Wait?! Microwave you say? How does that work? Actually it is pretty easy. About halfway through, your eggs will look like the image above. You just push the eggs that have cooked toward the center and return the dish back to the microwave. I modeled my recipe after the Egg, Sausage & Cheddar Breakfast Bowl having a Cost Per Serving of $1.61.

Ham and Egg Cheddar Bowl


  • 2 eggs, beaten
  • 2 T skim milk
  • 1 piece of sliced ham (leftover lunch meat is what I used)
  • 1 T Cheddar cheese
  • Dash of salt and pepper
  • 1/2 chopped parsley


  1. Whisk the egg, milk, and spices until blended. You can do this right in the bowl you plan on microwaving and ultimately eating out of to save on time and dishes.
  2. Mix in the sliced ham. You can also use cooked bacon or sausage.
  3. Microwave for 45 seconds on high
  4. Push the cooked edges toward the center.
  5. Microwave another 45 to 60 seconds longer until the egg is almost set.
  6. Top with the cheese before serving.

I found it rather easy to take this challenge. My kids love eggs and we eat them often. I have never been a big fan of sugary cereals. I want my children to arrive at school well fed and concentrated on learning and not hunger. You can tell by Mason’s happy, stuffed face, he is more than happy with the switch. He finished all of his eggs in no time flat. Less doddling at the breakfast table equals on time to school!   1. My all-time fave is a Three Egg Omelete with shredded cheddar cheese, chopped onion, chopped green pepper and chopped ham. It is so delicious, filling and an awesome start to the day!!

  2. Scrambled eggs with queso blanco melted in them and sautéed onion and mushrooms, along with delicious bacon, of course!

  3. Believe it or not, if I had to choose between eggs and chocolate – I’d probably choose eggs – which shocks even me!

    I love eggs pretty much anyway one can prepare them. When I have to go out to work on a project – I often make/take a “Breakfast Sandwich” – is a cheese (Gouda, Havarti, Gruyere – pretty much anything that isn’t a processed product pretending to be cheese, top it with avocado slices and sandwich between toasted English Muffin halves.

    (Sometimes if I want to cut the fat and eat healthier – I’ll cut out the cheese and avocado and simply scramble the eggs spoon on top of the muffin and top with a big handful of either radish or alfalfa sprouts. Everyone seems to think this one is, well, “disgusting” – but it really does taste good and healthy at the same time.)

    My favorite breakfasty egg indugence is an omelet filled with FRESH spinach and cheese (in this case it has to be either Feta or (sharp) Cheddar (sometimes I splurge and add some sauteed mushrooms ) Divine!

  4. It’s completely horrible for you, but I love eggs benedict. I often make it in to a breakfast sandwich by cooking the egg a little more well done and by using the hollandaise as a spread instead of sauce

  5. I purchase a loaf of Garlic and Parmesan texas toast slices that can be done in a pop-up toaster. I fry one extra large egg over easy. When the toast pops up, it goes on a plate and then topped with a few slices of extra old cheddar, three slices of cooked bacon and the soft fried egg. I have precooked the bacon and put it in the refrigerator in small snack size zip bags so it only needs to be warmed in the fry pan beside the egg. I love this simple and amazing breakfast!

  8. Our favorite is Eggs scrambled, Sharp Cheddar Cheese, Green Onions, Red, Green, Orange Pepper all scrambled together. Yum!

  9. My kids love ham and cheese quiche. I make it in advance and reheat it in the microwave. It saves time and tastes great!

  14. I love scrambled eggs, but I’m more likely to make them for dinner because I am not enough of a morning person to cook breakfast. I like to make hard-boiled eggs and keep them in the refrigerator for a quick grab-and-eat breakfast.

  17. Boiled eggs, because I can grab them( Cooked and peeled ) out of the fridge and eat them on the way to the commuter bus. I also have a whey power shake in the fridge, blended and ready to pour in my thermos.

  18. I love to make soba noodles with Kale, lots of veggies (whatever is lying around), and a fried egg. Add a little goat cheese and you’re all set. So yummy!

  23. I’ve heard it called many names like the Mess, but it’s eggs, potatoes, onions, sausage and cheese all mixed together. I love it! I bet I could come up with a microwave version, too! Love it!

  26. My favorite is migas, which is a Mexican breakfast dish that combines fried corn tortilla strips with scrambled eggs. Delicious!
