Since I had my shoulder surgery a few months ago, I have had to make some changes. It is remarkable the things you take for granted and when you cannot use them, you are turned upside down. I have had the toughest time keeping the house clean and cooking and the kids have been a great help where they can. For a while, I could not even open the oven and put a pan in and take it out without help. You would be surprised how tricky it is to try and take a lasagna pan out of the oven one handed! I decided to find an easier way to cook meals and my sister suggested I use an indoor grill. We love to eat chicken and pork on the grill so that was a great idea! I found exactly what I was looking for from the huge selection at Buydig.com. I decided to make one of my family favorite recipes with Cuisinart products I received from Buydig.com.

As soon as the hand mixer arrived and Caitlin saw it was pink, she decided she wanted to make breakfast! The mixer, which retails for $49.00 on the Buydig.com website, it easy to use, is lightweight and what I love most of all is the beaters are super easy to eject. I hate fighting with a mixer whose eject button is hard to push and the beaters still do not want to come out. With a swivel cord for right-handed or left-handed use with extra-long self cleaning beaters, I must admit, it is the best mixer I have ever used!

For the grill, which sells for $99.95, I decided to make a recipe we all love that is super easy to make; Asian BBQ Chicken. You can find the recipe for the dish below the giveaway widget at the bottom of this post. The grill is like a cook’s dream come true! It is smaller than other grills I have used, so it is easy to move around and takes up less counter space. The 4-in-1 functions as a contact grill, panini press, open grill, or griddle. It has a brushed stainless-steel housing, indicator lights, a sturdy panini-style handle and floating hinges to adjust to the thickness of food. The adjustable temperature controls are easy to read, the cooking plates are dishwasher-safe and nonstick and they drain the grease away from the food. You can make bacon and eggs, pancakes, steak, pork chops or my Asian BBQ Chicken!

Here is my recipe for this delicious and easy to make meal. Just serve over white rice and you are good to go!

Asian BBQ Chicken Recipe

Ingredients
  • ¼ cup packed brown sugar
  • ¼ cup soy sauce
  • 1 Tablespoon fresh lime juice
  • ½ teaspoon crushed red pepper
  • 3 cloves garlic, minced
  • 8 (6-ounce) chicken thighs, skinned
  • chopped green onions
Instructions
  1. Combine the first 6 ingredients in a container with a lid and add chicken. Seal and marinate in refrigerator 4 hours, turning occasionally.
  2. Pre- heat grill.
  3. Remove chicken from container but reserve the marinade. Place the marinade in a small saucepan and bring to a boil, cooking for 1 minute.
  4. Place chicken on grill and cook for 15-20 minutes or until done, basting frequently with the marinade. Garnish with green onions, and if desired, serve over rice.
