Fresh Homemade Meals at Zoes Kitchen Sweepstakes

We had a blast creating a ton of recipes with the package that I received from Zoës Kitchen. We had fish tacos topped with the most delicious slaw ever, pimento cheese quesadillas, and pasta and chicken salad casserole! Fresh Homemade Meals

There is nothing like fresh homemade meal, made completely from scratch.  It is even better when you can have someone else do that cooking for you.  Zoës Kitchen originated from just a few of Zoe Cassimus’ original recipes that really took off in the kitchen with just her and her husband.  Before too long her son, John Cassimus, stepped in to help out the expansion through the Southeast.  Inspired by her original recipes and her simple, fresh-from-the-garden keenness, they continue to start every day by making the food from scratch onsite at each restaurant.  The food is Mediterranean-inspired with a consciousness of dietary concerns since none of their food is fried, and offers gluten-free and vegetarian options. I made this lentil bean salad by combining the hummus dish a created in the video with yellow peppers and lentils. It was so yummy, I made it twice!

Zoës Kitchen originally opened in 1995 in Birmingham, Alabama.  They have grown to 50 restaurants that are spread out among 12 states, including: Maryland, Virginia, North Carolina, South Carolina, Georgia, Florida, Alabama, Tennessee, Kentucky, Louisiana, Texas and Arizona.  Zoë means “life” in Greek, and their philosophy is built on a balanced lifestyle of spending time with family and friends over a simple, homemade meal.  Currently they are not offering franchising opportunities, but hope to sometime in the future.
