When We Bake

Whether I am whipping up a simple dinner on a school night or cooking for dozens over the holidays, we gather together when preparing food. The boys learn valuable lessons in mathematics, biology, chemistry and hazardous waste disposal. They don’t see it as necessity yet, and it’s still fun. What they lack in patience they make up in enthusiasm. With their invaluable help or despite their best efforts to ruin everything, we always have a great time. Country Crock® is often a staple in my house, and I’ve created several recipes with it. The Ginger Cookies we made were delicious, and I was happy my friends who dropped by often went back for seconds. My heart warms as I hear a distant echo of my Nonna saying, “Manjia Manjia!”

Ginger Biscuits Recipe

Ginger Cookies

Ingredients
  • 2 c flour
  • ⅔ c sugar
  • 1.5 t ginger, ground
  • ¼ t salt
  • ½ c Country Crock®
  • ½ c sour cream
  • ¼ c decorating sugar
Instructions
  1. Preheat to 350
  2. Combine dry ingredients
  3. Mix in Country Crock® and blend with a fork til it pills
  4. Add sour cream
  5. Form into a ball
  6. Refrigerate for 15 minutes
  7. Roll flat & cut shapes with a cookie cutter
  8. Brush the egg Glaze & sprinkle the decorating sugar
  9. Bake 11 minutes
  10. Let cool

  • Tangerine Walnut Biscotti: When we bake this twist on a classic companion for my morning coffee the whole house smells great. Country Crock®’s version has the more traditional ingredients, whereas the contents of my cupboard that day were a little more… eclectic. I imagine everyone brings a little something unique to the table. These did not turn out very dainty. More of a bold, crispy, nutty slab that gives the coffee a run for its money.

  • Red Velvet Crinkle Cookies: When we bake red velvet crinkle cookies it makes the kitchen glow red. The name just rolls off the tongue. Instead of the classic lines of the red velvet cake, we produce a deliciously flowing river of cookie magma. All the satin and sweetness of your (above) average slice in a perfectly crumbly bite-sized disc. The boys love the way they look. Me too. So simple to make, too. Don’t underestimate how much work goes in to making a cake stand up straight like that. For most of the recipe, you’re building foundations or reinforcing load bearing walls. It’s a more efficient delivery system for your sugar, flour and eggs. Try it and see!

You can probably find a version of your family’s favorite recipes at Country Crock®’s website. It’s a great place for my family to start when we bake. We don’t often end up where I thought we would when we started, but that’s half the fun. My favorite meals are the ones that could not have been planned. With our effort and care they end up somewhere different, somewhere special, every time.
