This is what my garage looks like. No I am kidding, but some days I feel like it is pretty close. When ever the cat is away the mice will play and my husband’s “play” is pizza. Lots and lots of pizza. Who am I kidding? I love pizza just as much as he does so it is a never ending battle to keep the door bell from ringing, “Pizza Delivery.” The problem with delivery pizza is that it is about $25 if not more per delivery and a pizza is on the upside of 1600 calories depending on what you order. When I had the opportunity to eat healthier with the Jennie-O Healthy Make The Switch Challenge where our family is to give up eating pizza and use the money that we would have saved to buy Jennie-O products for our families and others. After participating in the Make the Switch Challenge, I am going to do a SIMPLE service project in my community to help Jennie-O Champions for Kids. Vodka Lasagna Recipe
My plan to get Noah to want to eat Jennie-O turkey products is to make a healthy lasagna using Italian Ground Seasoned Turkey. Swapping turkey into your favorite recipes is a great way to save fat and calories. You can Make The Switch in so many foods you normally eat because turkey is as lean as it is delicious! This week we are going to try several recipes with Jennie-O turkey products instead of our normal fat-filled products like breakfast sausage and meat lasagna. I made up the Vodka Lasagna Recipe, but there are a ton of great recipes on the Jennie-O website.
The meats were so inexpensive I choose quite a few to donate to the ACT abuse shelter.
From their website under ways to help, “Hold a food drive. With our two shelters full most of the time, food is always an issue. We can always use canned vegetables, fruits, and various frozen meats.” Abuse Counseling and Treatment, Inc. (ACT) is a private, not-for-profit agency committed to serving victims of domestic violence, sexual assault and human trafficking. They have a local shelter where the mothers and children stay at to escape abusive partners. This is an important issue for me. Women and the children in their families need safe places to be harbored. Many, many women and children are killed every year from abusive partners.
ACT’s mission is to protect, support, and educate victims of domestic violence and their children, survivors of sexual assault and human trafficking and the new and temporarily homeless in Lee, Hendry, and Glades Counties.
Once home, I began cooking. I was really impressed with the lack of fat that came from the turkey when I browned it.
My plan is to use fresh spinach, jarred Vodka Spaghetti Sauce and olives to make a veggie turkey lasagna with a twist (the vodka sauce). I did not use ricotta or eggs to keep it kind of lo-calorie. This recipe is definitely healthier than fully loaded pan pizza!
