One of the best things about interviewing Gwyneth Paltrow was that you could feel her positive energy. She was amazing to talk with. She chatted with us briefly talking to us about her Iron Man 3 experience and then about her new cookbook, It’s All Good: Delicious, Easy Recipes That Will Make You Look Good and Feel Great. The recipes in this book were inspired by her son’s allergies. He has really bad eczema and he had to do all of the food allergy tests. He ended up being allergic to cow’s milk, gluten and chicken eggs. Gwyneth felt bad for him not being able to have any of the normal kids stuff like spaghetti and meatballs or ice cream. She explains how her cookbook began, “I’m gonna just make him a mini-encyclopedia of totally yummy comfort food that’s just on his diet. It’s been incredible because so many people are trying to avoid gluten either for weight or they’re allergic to it. — That’s sort of how it all happened.”

My mom, who is a huge fan of Gwyneth Paltrow was the one who received the book she gave us. You can see her signing them in the image above. I had Gwyneth sign mine to my mom instead of me, just in time for Mother’s Day! Because my mom is also allergic to half of the planet as well as the proud owner of fibromyalgia, I knew she would get great use of great advice! I cannot believe how many recipes are included in It’s All Good that are still great tasting without chicken eggs, flour, milk, butter, etc. I mean how do you make a cake without the cake? Pretty cool how Gwyneth Paltrow can do it!
