Leprechaun Pie St. Patrick’s Day Recipe
Looking for a St. Patrick’s Day recipe to treat your family? Try this Leprechaun Pie and watch their eyes light up. It’s super easy to make and tastes like you spent hours preparing it. This St. Patrick’s Day recipe is very versatile. I used a pre-made pie crust but you can choose to make your own or use a graham cracker crust instead. I also made my own whipped cream but you can certainly substitute a whipped topping if you prefer.
- 1 standard pie crust – baked
- 1 package (8 ounces) cream cheese, softened
- 1 cup confectioner’s sugar
- 1 cup heavy whipping cream, whipped (divided)
- 1 1/4 cups cold milk
- 1 package (3.4 ounces each) instant pistachio pudding mix
Bake the pie crust according to the directions on the package and let it cool completely. Whip the heavy whipping cream until peaks form. In a small bowl, beat the cream cheese & confectioner’s sugar. Fold in half the whipped cream. Spread over the crust. Whisk milk and pudding mix for two minutes until the pudding sets. Spread over the cream cheese layer. Cover and refrigerate for at least 4 hours before serving. Top with a spoonful of whipped cream.
