I have been on a diet for about 5 years. Maybe longer. I am a yo-yo dieter and I always go up and down in weight like crazy. This time around, I let things get a little out of hand and ended up weighing as much as I did when I was pregnant with my first son. Unacceptable, and I just did not feel very good about myself for letting my body get so out of shape. I knew I needed a lifestyle change and not just a quick fix diet. So I enrolled to a weight loss center to learn new habits, make lifestyle changes and start eating healthier with a support system that would encourage me. Today I am celebrating my official first 20 pound weight loss mark! What better way to celebrate than to create a healthy, low calorie favorite of mine – a cupcake. You can see my whole creation process in my Google Plus Album.

Licking the Cool Whip Frosting

I have always been intrigued by savory cupcakes, and could not wait to try out my hand at creating one. I know that if you ever want something to have less calories, you usually need to create the recipe yourself! I figured that the Cool Whip Cream Cheese Frosting would go really well with the lime and dill flavors I added, and I was right! My kids could not get enough of licking the frosting I created. It is a good thing I separated the amount I would need out!  I ended up putting the frosting mixture into a cookie creator gun after adding the lime zest and dill.

Cool Whip is one of the splurges my diet center allows me to have. Compared to most sweet things, it is relatively low in calories and comes in lite and fat free. I knew I would be able to create a cupcake masterpiece using the Cool Whip brand. I found the Cream Cheese Cool Whip Frosting in the freezer aisle at Walmart.

I had three flavor choices to choose from: Chocolate, Vanilla and Cream Cheese. I am a huge cream cheese fan, and I believe any dish can be approved on with cream cheese (and bacon) so guess which flavor I chose?

The Cool Whip Cream Cheese Frosting only had 30 calories per Tablespoon which was the perfect amount to top my Shrimp Cupcakes. If I would have made it the traditional way, the frosting alone would have been more calories than the entire finished cupcake I created.
