Parmesan Potato Puffs are a simple side dish that will convince your family that you spent much more time in the kitchen than you really did. If you want to serve something different for dinner instead of the traditional rice or mashed potatoes, this recipe is for you. Â Created from leftover mashed potatoes, the Parmesan Potato Puffs are a flavorful re-take on classic mashed potatoes.
Parmesan Potato Puffs
Ingredients
- 2 cups mashed potatoes (leftover or freshly made)
- 3 eggs, beaten
- 3/4 cup grated fresh Parmesan, divided
- 1/4 cup minced chives
- salt and freshly ground pepper

Directions
Preheat the oven to 400F and lightly grease the cups of a regular muffin tin pan (6 cups). Â I leave the skins on the mashed potatoes when I make them for added fiber and visual interest. You can remove them if you prefer. Â Combine the mashed potatoes, eggs, 1/2 cup of grated fresh Parmesan, chives, and salt and pepper.
Fill muffin tins mostly full with the potato mixture and then sprinkle the top of each puff with the fresh, grated Parmesan cheese.
Bake for 20 minutes or until the Parmesan Potato Puffs are golden brown on top and hot all the way through. Serve immediately.
