As the kids get older, they are more involved in Halloween, which I love because it is one of my favorite holidays. My kids and I get excited about Halloween before the summer is over! By July, we are already planning what costumes we will wear, how we will decorate the house and what goodies we are going to bake. We do a lot of baking all year round, but there is something about making fun Halloween inspired snacks and treats that makes me smile. We have a great system; I am the one who does the baking and the kids are on the cookie decorating committee. Halloween would not be the same without some goofy Jack O Lantern inspired cookies. One of our favorite recipes are my Pumpkin Spice Cookies and we eat them from September through January, and often right into summer!
This is a pretty standard refrigerator cookie recipe with a few tweaks with the fall flavors added in. I usually have all the ingredients in my pantry, including the canned pumpkin puree. This is a fall staple for me as I use it in so many recipes when there is a chill in the air. Not only is fresh pumpkin hard to get, it can be a huge mess to use, so I prefer to use the canned version instead. It is kept sealed for freshness and I can stock up on it as I know it has a long shelf life. If you have little ghouls in your house who love cookies, they will flip over these Pumpkin Spice Cookies. I let my kids decorate their Jack O Lantern’s, and they did not last more than a few minutes after the pictures were taken! Once you try them, you will understand why!
- 2½ cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- ½ cup canned pumpkin puree
- 2 tsp. ground cinnamon
- 1 tsp. all spice
- ½ tsp. salt
- ½ cup (1 stick) butter or butter flavored shortening, softened
- 1½ cups sugar
- 1 egg
- Preheat oven to 350°F. Line or spray baking sheet
- In a medium bowl, combine the flour, baking powder, baking soda, spices and salt; set aside.
- In a separate medium bowl, cream the butter and sugar. Add the pumpkin puree, and egg. Beat until creamy. Add the dry ingredients and mix until thoroughly combined. Drop by tablespoonfuls onto prepared cookie sheet. Flatten slightly.
- Bake for 15-20 minutes. Allow to cool on the pan for 3 minutes, then carefully transfer to a wire rack to cool completely.
