We have two kids whose idea of get-up-and-go means walk to the living room with a blanket and lay back down on the couch. I want my kids to get a good breakfast, but it cannot take too much time to make. Eggs are one of our go-to options, and most recently we have been on the American Egg Board 10-day breakfast swap. Did you know research shows an egg breakfast, which is rich in protein, improves appetite control? No hungry rumblings from the tummy to interrupt important classwork. I remember I used to focus on my grumbling tummy in high school because I used to skip breakfast. Not only did it distract me, but those around me as well. Eggs are all natural and chock full of essential vitamins, protein and minerals. I think eggs make a perfect breakfast to provide my children with the energy they need for their busy day. - 1 egg, beaten
- 1 T milk
- 1 piece fully cooked ham (I use lunchmeat)
- 1 round flatbread
- 2 T cheddar cheese
- herbs to season
- Mix the egg and milk in a bowl with herbs
- Microwave for 30 seconds on high, push cooked eggs toward center
- Microwave for 15-45 seconds until egg is almost set (It took me more than 45 seconds, so make sure you check it)
- Place ham on the flatbread
- Top with the egg, then cheese
- Microwave for 15-30 more seconds to melt cheese

We eat eggs a lot. I serve them as breakfast sandwiches or just plain. We have them often for dinner too.
