Recipe For Success Stems From A Great Breakfast #TeamEggs

This is a sponsored post written by me on behalf of the American Egg Board. Getting the kids ready for school in the morning is one of my family’s biggest challenges. We have two kids whose idea of get-up-and-go means walk to the living room with a blanket and lay back down on the couch. I want my kids to get a good breakfast, but it cannot take too much time to make. Eggs are one of our go-to options, and most recently we have been on the American Egg Board 10-day breakfast swap. Did you know research shows an egg breakfast, which is rich in protein, improves appetite control? No hungry rumblings from the tummy to interrupt important classwork. I remember I used to focus on my grumbling tummy in high school because I used to skip breakfast. Not only did it distract me, but those around me as well. Eggs are all natural and chock full of essential vitamins, protein and minerals. I think eggs make a perfect breakfast to provide my children with the energy they need for their busy day. You can see how quickly a dish can be made on my Vine video below.

Since starting the American Egg Board Challenge my family has benefited from a quick, yet healthy breakfast every morning. I know I have sent them out into the world knowing they had a nutritious first meal of the day. Since most egg dishes are under $1.50 per serving, I am helping with our family budget as well. My kids really liked the last egg recipe I made modeled after the Microwave Breakfast Flatbread Pizza which has a Cost Per Serving of $1.99.

Flatbread Ham and Eggs
Serves: 1
  • 1 egg, beaten
  • 1 T milk
  • 1 piece fully cooked ham (I use lunchmeat)
  • 1 round flatbread
  • 2 T cheddar cheese
  • herbs to season
  1. Mix the egg and milk in a bowl with herbs
  2. Microwave for 30 seconds on high, push cooked eggs toward center
  3. Microwave for 15-45 seconds until egg is almost set (It took me more than 45 seconds, so make sure you check it)
  4. Place ham on the flatbread
  5. Top with the egg, then cheese
  6. Microwave for 15-30 more seconds to melt cheese

I included the other recipes below so you can take the challenge with me.
  • Egg, Sausage & Cheese Breakfast Puzzle Sandwich (Cost Per Serving: $1.99)
  • Microwave Egg & Sausage Breakfast Taco (Cost Per Serving: $1.99)

  1. Yum! That looks so good, and so easy – I’ll definitely be trying this one out. We are also big eggs for breakfast people at my house – eggs are just so easy to work with and so versatile. Thanks for the great recipe!
