Recipe For Success Stems From A Great Breakfast #TeamEggs

We have two kids whose idea of get-up-and-go means walk to the living room with a blanket and lay back down on the couch. I want my kids to get a good breakfast, but it cannot take too much time to make. Eggs are one of our go-to options, and most recently we have been on the American Egg Board 10-day breakfast swap. Flatbread Ham and Eggs

Ingredients
  • 1 egg, beaten
  • 1 T milk
  • 1 piece fully cooked ham (I use lunchmeat)
  • 1 round flatbread
  • 2 T cheddar cheese
  • herbs to season
Instructions
  1. Mix the egg and milk in a bowl with herbs
  2. Microwave for 30 seconds on high, push cooked eggs toward center
  3. Microwave for 15-45 seconds until egg is almost set (It took me more than 45 seconds, so make sure you check it)
  4. Place ham on the flatbread
  5. Top with the egg, then cheese
  6. Microwave for 15-30 more seconds to melt cheese
