Sweet Corn

One of my childhood memories was of shucking corn. We used to buy it by the paper bag full every time it came in season. It always made me feel like I was helping my mom out in the kitchen and it was an “important job” that my sister and I got to do together. I wanted my kids to have the same experience that I did, so I taught them the joys of shucking! Mason peeled each layer of husk one by one to revela the sweet corn underneath.

Since Jakobi is older by two years over Mason, he had the dexterity to grab the husk easier. I figure since he got his shucked sooner than Mason, he felt entitled to a bite. He is just like mom, always sampling the food.

I absolutely LOVE corn in the raw. It has such a sweet flavor. I am not surprised that my kids love it as much as I do.

My family loves falafels, and we make it all the time. My mom also used to make corn fritters for us when we are kids, so adding corn to the falafel mix just seemed right.

I also learned from my chiropractor a long time ago a trick to substitute butter on your corn. All you do is add cayenne pepper to mayonaise and spread on while hot! Yum!

The cayenne mayonaise tastes so good, you will eat at least two ears. I paired the corn together with the falafels and it was a huge hit for dinner.

W hat is totally awesome is this makes a hugely popular left over meal as well. Fresh corn is a family favorite and we love when the season hits our markets.

Falafel Fritters made more delicious with Sweet Corn. The cayenne pepper mix is so much healthier than butter.
Ingredients
  • SweetLife Corn Ears
  • Falafel Mix
  • Oil
  • Cayenne Pepper
  • Mayonaise
Instructions
  1. Add the sweet corn to the Falafel Mix and fry in the patties in the oil.
  2. Mix together cayenne pepper with Mayonaise
  3. Bake the sweet corn ears wrapped in aluminum foil for 20 minutes at 450
  4. Spread cayenne mix on the sweet corn.
