With the holidays right around the corner and my brand new baby due any moment now, I am trying my best to get mentally prepared for the craziness that is about to ensue. I already have friends and family members asking what Chris and I will be doing for the holidays. If it were up to me, I would want to just hide from it all! Knowing this isn’t fair for Aidan, or Chris, I’m going to have to suck it up and put on my hosting face! I already know that I want to make smaller, easy to make foods to serve to our holiday guests. Having an ex-sous chef as a husband is super helpful in this respect. He has so many great recipes up his sleeve, one of my favorite being a yummy thin crust pizza loaded with cheeses and fresh veggies. It is a family favorite that we enjoy as an appetizer or a full meal.

When I make my thin crust pizza, I always use the freshest of ingredients. It is important to me to feed my friends and family real, fresh-tasting ingredients like fresh peppers, onions and delicious Sargento Shredded Natural Cheese. Sargento is always my go-to cheese because of quality and flavor. You can really tell the quality of cheese by how it melts, and Sargento Cheeses always melt perfectly on my pizza. For this recipe, I used Sargento Off The Block Mozzarella, Traditional Cut, and Sargento Artesian Blends Parmesan.

Thin Crust Cheese and Veggie Pizza Recipe

This thin crust veggie pizza is the perfect appetizer before a big meal or a great dinner when cut into larger slices

Ingredients

  • 1 package of prepared pizza dough
  • 1 onion
  • 1 cup fresh spinach
  • 1 cup fresh mushrooms
  • 1 red pepper
  • 1/2 can pitted black olives, chopped
  • 2 1/2 cups Sargento Mozzarella
  • 1 cup Sargento Artisan Parmesan
  • 2 Tbsp Extra Virgin Olive Oil
  • 1/2 Tsp minced garlic

Instructions

  1. Par-bake prepared pizza dough (per instructions on package)
  2. Chop onion and pepper
  3. Remove par-baked pizza dough and spread with oil and minced garlic mixture
  4. Cover dough with fresh spinach first, then add mushrooms and top with 2 cups mozzarella cheese
  5. Spread onions, peppers and olives over pizza and top with remaining mozzarella
  6. Add 1/2 cup of artisan Parmesan
  7. Cook until crust is browned and cheese is melted.
  8. For a crispy bottom, remove from baking sheet and cook for a few minutes directly on the rack.
  9. Cut the pizza in small squares or large squares, depending on if appetizer or meal.
  10. Top with remaining artisan Parmesan
