I try every which way to get veggies in my families mouth, so I act when I see the opportunity. Country Crock sent me a recipe for a Family Fave Veggie Casserole along with a free sample and other cooking supplies. I adapted the recipe to make it my own using the vegetables my kids favor along with some peppers for a splash of color. The end result was not only pretty but extremely delicious. The vegetable casserole barely made it to the next day before it was eaten.

Vegetable Casserole Recipe

  • ½ cup Country Crock® Spread
  • ½ cup panko bread crumbs
  • 1 bag frozen broccoli florets, thawed
  • 1 sliced red pepper
  • 1 sliced orange pepper
  • ½ onion, sliced
  • ½ cup greek yogurt
  • 1 egg
  • ¼ cup water
  • 1 cup cheese, shredded
  1. Preheat oven to 425°.
  2. Melt Country Crock® Spread over medium heat in large nonstick skillet.
  3. Remove 2 Tbsp to small bowl; combine with crumbs and set aside.
  4. Add vegetables to skillet and toss to coat.
  5. Pour into shallow 2-qt. baking dish.
  6. Mix in the yogurt, ½ the shredded cheese
  7. Combine the remaining cheese and panko and top the casserole
  8. Bake until bubbly around edges and crumbs are lightly golden, about 25 minutes.

  1. My favorite vegetable to put in a casserole is potatoes, broccoli, onions, carrots… I can’t pick just one!

  2. I’d have to go with onions. It seems that every dinner I make starts with chopping or slicing an onion, whether it’s a casserole, a stir-fry, a quiche, meatloaf, whatever! I love the flavor they add to just about everything.

  3. Probably potatoes, since my husband will eat them. i would love this vegetable casserole, but I’m the only one who will eat broccoli.

  4. I love putting corn in casseroles, and also think broccoli is a great veggie in this particular casserole! Yumm!!

  6. I’ll admit I haven’t made very many casseroles, but I have made tuna casserole and I used mushrooms in it – so I’d have to say mushrooms! I think broccoli would be a great casserole ingredient too.

  7. My favorite vegetable for casseroles, and just about everything else, is zucchini. They don’t have much flavor, so I can hide them from my kids, and they always add moisture.

  8. Its according to the kind of casserole to which is my favorite veggie to put into it. I would guess that more often than not Broccoli.

  9. Favorite veggie in a casserole?? I suppose I would say Broccoli… because we seem to make a lot of casseroles with it! Chicken Divan comes to mind first of all cause it’s a real favorite around here.
