I was recently invited by Mamavation and The Mushroom Council (AD), to take part in a 30-day weight loss challenge called the #MushroomMakeover. I am so excited to participate in this campaign because for me, it is not about weight loss as much as it is about changing to a healthier lifestyle. I have had a lot of ups and downs with my weight and exercise regime over the past 18 months. I have struggled after my shoulder surgery to get back on track. I had lost my motivation and was feeling pretty stagnant. Once I was chosen to participate in this challenge, I knew it was exactly what I needed!
The #MushroomMakeover is not just about mushrooms! It is about making healthier choices in my food, my activity and in turn, my attitude. We are adding in or replacing an ingredient with mushrooms in at least 4 meals per week for 4 weeks. I absolutely love mushrooms, so the only challenge has been deciding which recipes to try! The Mushroom Council has a ton of great recipes as does their Pinterest Boards.
We are blessed to have the guidance of Corinne Dobbas, who makes learning about the science behind weight loss fun. She is encouraging and gives us healthy tips and fun challenges (Hydrate lol.)
The other part of the #MushroomMakeover challenge is to get active and implement an exercise routine. We have been provided with a great schedule along with tips and links to routines on Youtube. We have a great guy, Mark Segedie, to coach us and answer a never ending stream of questions from me about my shoulder! It is such a comfort to know we are in such capable hands.
This week, I have made several delicious recipes. I wanted to make this a completely new experience, so I am trying several new recipes. I have made the:
Mushroom and Feta Flatbread Pizza
The Marinated Grilled Portobello Mushrooms And Eggs
The Whole Wheat Veggie Pasta With White Wine Sauce
My favorite is the Veggie Egg White Cups recipe! I will be posting each week with a new #MushroomMakeover recipe and an update on my progress. Stay tuned!
- Egg Whites
- Red Pepper
- Red Onion
- Low Fat Cheese (optional)
- Preheat oven to 400 degrees
- Dice vegetables and set aside
- Pour egg whites into muffin tins (I use silicone muffin cups). Fill ¼ of the way
- Add a small amount of veggies
- Add cheese (optional)
- Pour more egg whites but leave enough room to top with a sprinkle of more veggies
- Bake for 12-16 minutes or until firm
- Allow to cool for 5 minutes and serve
