White Chicken Chili Recipe

Oh goodness, it is that time of the year again. My husband has been dropping the “F” word all over the place and I am not happy about it. You know the word ladies; “Football.” I have officially become a football widow and I will hardly see my husband emerge from his man cave for about 3 months. Heck, if it were not for my cooking, I would never see him this time of year at all! If there is one thing we can both agree on, it is our love of food. I may not be a huge football fan, but I am a huge fan of food. I enjoy cooking, especially my hubby’s favorite dishes. One of his all time favorites, and mine as well, is my Game Day White Chicken Chili. It is super easy, tastes amazing and is a huge crowd pleaser.

White Chicken Chili Recipe

My best friend made it for me more than 15 years ago when I had delivered my second child. She and a group of my other gal pals got together and cooked meals for my family for over two weeks. Of all the meals we were served, the White Chicken Chili was by far our favorite. It has become a must have on those chilly football game days or just about any other time of the year for that matter. One of the biggest reasons I love this recipe is because it is virtually all canned goods! I also like this recipe because I know it is packed full of nutrition as well as flavor. With the chicken and beans for protein, the tomatoes for your veggies and the chilies to rev your metabolism, you have almost all your pyramid bases covered! When you are in a hurry and want to serve your family a great meal, just head over to the pantry and grabbed a few of your favorite canned goods and get creative!

  • 2 cans of chicken breast
  • 3 cans of white, Northern beans, rinsed and drained
  • 1 jar of chunky salsa
  • 3 cups chicken broth
  • 1 can of diced tomatoes
  • 1 can diced green chilies
  • 1 package of shredded cheese (whatever variety you prefer)
  1. In a large pot, empty all cans and stir. Simmer on medium-low heat for 30 minutes.
  2. Stir in cheese
  3. Serve immediately
