As part of the Avocados from Mexico: Spookamole Contest Blog Tour, I created the Witch’s Cauldrons Recipe. You can see the kid-friendly version in the video below. I found it really easy to think of many recipes for this contest. Avocados are a family favorite, and we eat them year round on burgers, in salads, in salsa, and of course guacamole. You can enter your own Avocado recipe in the contest too! Just create your own Spookamole creation and submit it to the contest as well! You do not need to post on a blog to be eligible, but it’s fun to share!!
Mango 1 medium
Honey Roasted Ham 1 thick slice (1 cup diced)
Haas Avocado 1 to 2 small
Red Onion 1/8 cup diced
Black Beans (drained) 1 can
Coarse Sea Salt
Slice the Haas Avocados in half dividing top from bottom. Scoop out the insides and save the bottom shell part for the cauldron. Also, save a few mushy pieces for the top. (Make sure you watch the video above–which is made without the red onions cause kids don’t like) Dry the outside of the bottom part of the avocado and put a decorative sticker on the outside with skulls on it or something Halloweeny.
Cut the top four ingredients into small chunks and mix together add the beans and mix. Add the remaining four ingredients to taste, start with 1/8 t each. I am a sprinkle on top and taste as I go kind of girl. Stir and fill cauldrons. Top the cauldrons with the squishy green avocado you had set aside and add a bean or two and a piece of ham to the top.
