Baja Tacos

Cooking can be fun as well as easy when you have the right tools on hand!  Around my house, dinnertime is quality time. I feel meals are healthier when cooked at home and often my kids help with the preparation. It is also more cost effective to make your meals at home rather than go out to eat! Everyday cooking solutions are offered by McCormick, so home cooks can celebrate flavorful, homemade meals every and any night of the week. Fish is a family favorite and so are tacos!

You can find many flavorful meals at such as the Baja Fish Tacos recipe which was PERFECT for my family! My brother came over when we made this meal, so it was a fun time for the whole family. We always enjoy when he comes around! He picked up the fish from the local market on the way over so it was a joint effort on all our parts. (Of course I had the cooking part, the kids and husband had the eating part lol)

I was also supposed to do an Instagram video, but it seems that requires more coordination than I had at the time (and my monsters eat faster than I can check to see if I got the video!), so we improvised!

Baja Fish Tacos Recipe


  • 2 cups prepared coleslaw
  • 1/4 cup chopped fresh cilantro
  • 4 teaspoons McCormick® Chili Powder
  • 1/4 cup cornmeal
  • 3/4 teaspoon salt
  • 1/2 teaspoon McCormick® Garlic Powder
  • 1 pound tilapia fillets
  • 2 tablespoons vegetable oil
  • 8 corn tortillas, warmed


  1. Mix coleslaw and cilantro in medium bowl. Cover. Refrigerate until ready to serve.
  2. Mix cornmeal, chili powder, salt and garlic powder in shallow dish. Coat fish evenly with cornmeal mixture.
  3. Heat oil in large nonstick skillet on medium heat. Add fish; cook 3 to 5 minutes per side or until golden brown and fish flakes easily with a fork. Cut fish into 8 portions. Serve in warmed tortillas topped with coleslaw.
