Chicken Meatloaf Recipe

Although I do not usually make any resolutions for the new year, this year I have made a concession. I have been on a journey to lose weight and have lost 25 pounds in the past 12 months. I had shoulder surgery in August and was unable to do any exercise, so that side tracked me a bit. I have been cleared to do some aerobic activity and can get back on track with my diet. In doing so, I have been looking for healthier versions of family favorites. A big hit in our house is meatloaf and I found this fantastic recipe I wanted to share with you. It is mouthwatering and moist and surprisingly flavorful. The only thing I may change next time is to add a little of the marinara to the meat for added moisture and flavor.

Chicken Parmesan Meatloaf

When I cook, I like to have a little fun in the kitchen. I love to use kitchen tools with color because it makes prepping and cooking more fun for me. I do not want to skimp on quality though, so for me, I turn to a company I trust; Zak Designs.

Chicken Parmesan Meatloaf Recipe
Recipe type: Entree

Health version of the traditional recipe using beef
  • 1 pound ground chicken
  • 1 egg ( lightly beaten )
  • ½ cup Italian seasoned bread crumbs
  • 2 tablespoons garlic ( cloves, minced )
  • ½ cup fresh Parmesan cheese
  • ½ cup marinara sauce
  • ½ cup mozzarella cheese, shredded
  1. Preheat your oven to 350 degrees.
  2. In a large bowl (I used mine from Zak Designs) using your hands, combine the ground chicken, egg, breadcrumbs, garlic, and Parmesan cheese.
  3. Place mixture into a greased loaf pan and form into a loaf shape. Top the meatloaf with the marinara sauce.
  4. Bake for 50-55 minutes or until chicken is cooked. Remove, add the mozzarella cheese on top and return to the oven until the cheese is melted. Remove from the oven and let the meatloaf rest for 5-10 minutes before serving.
