Blueberry Cheesecake Muffins
 
Ingredients
  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs, beaten
  • ½ cup milk
  • 2 cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 cups fresh or frozen blueberries
Cheesecake Topping
  • ¾ c. sugar
  • 2 eggs, lightly beaten
  • 16 oz cream cheese, softened
  • 1 tsp. vanilla
Instructions
  1. Cream butter and sugar together
  2. Add in the eggs and milk
  3. Combine dry ingredient, then add.
  4. Fold in the blueberries
  5. Fill the greased muffin tins ½ way.
Cheesecake Topping
  1. Mix together all of the ingredients and then add to the muffin tins filling only up to ⅔ full
  2. Bake at 375 degrees for 40 minutes or until cheese cake topping has set.
