Asparagus Crepes Recipe #CansGetYouCooking
  • 2 eggs
  • ½ c milk
  • ½ c water
  • 2 T butter, melted
  • 1 c unsifted flour
  • ½ t salt
  • 2 cans of asparagus, long-stemmed with tips, drained (but any kind will do)
  • Double Hollandaise Sauce recipe
  1. Place all ingredients in a blender container
  2. Cover and blend until smooth
  3. Let batter rest at room temp for one hour
  4. Wipe a non-stick skillet with butter on a paper towel
  5. Heat pan to med-high heat
  6. Pour 2 T of batter in the pan, tilting until the bottom is covered
  7. Cook until golden brown and dry in the middle
  8. Turn and cook briefly on the other side
  9. Cool on cake rack before stacking
  10. Preheat oven to 350
  11. Place 2-3 whole asparagus lengthwise in the crepes
  12. Add 1 T Hollandaise Sauce
  13. Roll up and place in a greased 13 x 9 baking dish
  14. Cover with foil and bake in preheated oven for 10 minutes or until warmed
  15. Top with remaining warm sauce before serving
