Red Pepper Steak And Potato Griller

This easy to make griller sandwich is perfect for lunch or dinner.
  • Skirt or Flank Steak
  • Red Peppers
  • Yellow Onion
  • Baking Potatoes
  • Low Fat Shredded Cheese
  • Whole Wheat or Flour Tortillas
  • Seasonings
  • Olive Oil
  1. Preheat oven to 450
  2. While oven is preheating, peel and slice potatoes into french fries, slice onions and peppers.
  3. Place fries on a baking sheet, lightly brush with olive oil and bake at 450 for 20-25 minutes or until tender. Remove and set aside
  4. Heat up skillet or grill and coat with olive oil. Season and brown meat on both sides for approximately 4-6 minutes. Remove and allow to rest. Slice thinly.
  5. Wipe out skillet and coat lightly with olive oil and cook onions and peppers for 2-3 mins
  6. Lay out one tortilla and layer beef, potatoes, vegetables and cheese and fold in half.
  7. Using Panini Press or Griddle, lightly coat with olive oil and heat to medium-high
  8. Grill tortilla until brown, approximately 2-3 minutes
  9. Allow to cool, cut in half, top with sour cream if desired and serve
