Vegetarian Calzone Recipe

Healthy version of a traditional calzone
  • 2.5 cups whole wheat flour
  • ½ teaspoon sea salt
  • 1 packet of active dry yeast
  • 1 cups warm water
  • 2 cups chopped mushrooms
  • 2 cups diced artichokes
  • 2 cups diced sun dried tomatoes
  • 1 cup low fat ricotta cheese
  • 1 cup low fat shredded cheese (I use a combination of Italian cheeses)
  1. For Dough: Mix all ingredients together, knead for 3-4 minutes, then allow the dough to “rest” for about 10 minutes. Use the dough to make 1 pizza or 8 calzones.
  2. For Calzone:
  3. Preheat oven to 400 degrees
  4. Split the dough into 8 portions and roll our like a small pizza.
  5. Fill each calzone with ¼ cup of each ingredient, beginning with the cheeses.
  6. Fold dough over and pinch closed. Cut 3 small openings to vent
  7. Bake on greased baking pan or pizza stone for 25 minutes or until golden brown
