GladwareWow! August is a crazy month for me! I was gone 3 out of the 4 weeks which meant my husband had to fend for himself and the kids for meals. Now that means they will eat macaroni and cheese with hot dogs and pizza for every meal including breakfast. So what is a mom to do? Well thankfully I was sent a GLAD Meal Kit program to introduce me to the wonders of freezing your meals ahead of time. OK – you can call me dense, I know freezing meals have been around for a long time, but it never occurred to me to do it. It also never occurred to me how easy it was to prepare ahead of time.

I was sent Glad FreezerWare Containers, a Printed recipe card for Mom Made Chipotle Chicken Enchiladas, and the necessary ingredients for the recipe, including: Tortillas, Diced chilies, and Enchilada sauce. However, my toddlers were not about to eat anything with Chipolte in it and I was feeling especially lazy so I made a Chicken Enchilada Bake instead. It took me a few minutes to slap together and I baked it in 30.

I felt good knowing that I could at least leave behind a few good home-cooked meals for my family while I was gone. The Glad FreezerWare container kept the meal from other freezer tastes (you know what I mean) and from freezer burn. I also know that it is made from BPA free plastic so there was no danger of toxins leaching from freezing the plastic or reheating the meal straight from the freezer to the microwave.

I also made a whole crockpot full of BBQ meat and stored it in the Glad FreezerWare containers for the crazy month of September coming up!

Chicken Enchilada Bake

Super easy meal to bake ahead of time and freeze for the family to eat later.
Ingredients
  • Tortillas
  • Enchilada sauce
  • grilled chicken breast
  • diced green chiles
  • olives sliced
  • Cheese
Instructions
  1. Spray a 9 x 9 pan with oil
  2. lay down a layer of corn tortillas
  3. layer green chiles, sliced olives and pulled grilled chicken
  4. layer sauce then cheese and start over with the corn tortilla layer until you reach the top of the pan
  5. top with enchilada sauce and cheese
  6. Bake at 450 degrees for 30 minutes
