Since I had a ton of phyllo dough from when I made my Parmesan Chips, I wanted to make Pizza Sticks! I did a Google search and the most popular search term for food was tomato and mozzarella appetizers . That made me think of my fresh herbs, Italian Margherita Pizza, fresh mozzarella and when back in the day I used to work at Macaroni Grill. (Insert music here…memories….)

Margherita Pizza Sticks: A Tomato And Mozzarella Appetizer #AppetizerWeek

The Perfect appetizer for the Superbowl! You can grab them with one hand and cheer your team with the other!
Ingredients
  • Phyllo dough
  • Stick of butter
  • Fresh Mozzarella Balls
  • Cherry Tomatoes, sliced in ½
  • Fresh Basil, mint, oregano, thyme
  • Olive Oil
  • Fresh grated Parmesan cheese
  • ½ cup Greek yogurt
Instructions
  1. Chop the fresh herbs in a food processor
  2. Add Parmesan cheese and oil until you have a spreadable consistency
  3. Add ½ cup Greek Yogurt and blend until smooth, set aside
  4. Melt the butter in the microwave, set aside
  5. Pull out a piece of phyllo dough and spread butter on it with a brush (keep phyllo covered to keep it from drying out)
  6. Top with a second piece of phyllo
  7. Spread the yogurt mixture on the second layer
  8. At one end alternate tomatoes with mozzarella cheese
  9. Roll the dough around the tomato cheese line
  10. Brush the finished roll with butter and top with Parmesan cheese
  11. Bake for 22 minutes at 375 degrees
