Welcome to Day number three of Appetizer Week, a multi-blogger event co-hosted by Kim of Cravings of a Lunatic and Kristen from Frugal Antics of a Harried Homemaker. Since I had a ton of phyllo dough from when I made my Parmesan Chips, I wanted to make Pizza Sticks! I did a Google search and the most popular search term for food was tomato and mozzarella appetizers . That made me think of my fresh herbs, Italian Margherita Pizza, fresh mozzarella and when back in the day I used to work at Macaroni Grill. (Insert music here…memories….)

- Phyllo dough
- Stick of butter
- Fresh Mozzarella Balls
- Cherry Tomatoes, sliced in ½
- Fresh Basil, mint, oregano, thyme
- Olive Oil
- Fresh grated Parmesan cheese
- ½ cup Greek yogurt
- Chop the fresh herbs in a food processor
- Add Parmesan cheese and oil until you have a spreadable consistency
- Add ½ cup Greek Yogurt and blend until smooth, set aside
- Melt the butter in the microwave, set aside
- Pull out a piece of phyllo dough and spread butter on it with a brush (keep phyllo covered to keep it from drying out)
- Top with a second piece of phyllo
- Spread the yogurt mixture on the second layer
- At one end alternate tomatoes with mozzarella cheese
- Roll the dough around the tomato cheese line
- Brush the finished roll with butter and top with Parmesan cheese
- Bake for 22 minutes at 375 degrees
