Welcome to Day #2 of Appetizer Week, a multi-blogger event co-hosted by Kim of Cravings of a Lunatic and Kristen from Frugal Antics of a Harried Homemaker. With the Superbowl just days away, we wanted to make sure you had plenty of ideas for your game day spread. Each day will include a list to a different set of appetizers. Please take the time to browse through them all. This event ends on Saturday, January 25.
I made Parmesan Chips from phyllo dough and fresh parmesan for my contribution to the football appetizer recipe roundup. I made them really quickly while the Pats lost their chance for the Superbowl to cheer my guy up!
- phyllo dough
- butter, melted
- salt
- pepper
- parmesan cheese, fresh grated is best
- Lay out one sheet of phyllo dough, while keeping the rest covered (don't want it to dry out)
- Brush with melted butter
- Grate fresh parmesan on top
- Layer another sheet of phyllo dough and redo the above steps until you have 4 sheets thick
- Top with salt, pepper and more parmesan
- Cut with a pizza cutter into shapes and using a spatula transfer to a parchment paper covered cookie sheet
- Cook at 350 for 6 minutes of until Golden Brown on top (watch carefully)

We make an easy “mock nachos”. Tastes great and is supper easy.
Roasted red pepper and goat cheese dip
I like boiled shrimp and red sauce or jalapeno poppers as appetizers!

I’m pretty simple. I’ve always loved cheese and crackers (and eaten ridiculously too much of them). I also like homemade black bean and corn salsa!

We love Tortilla Chips and 7 layer Dip!
We do different things every year and we rotate gathering in homes four other couples and do some heavy duty potluck snacking. This year we are going to a friends (she just had hip replacement surgery and wanted up all to travel to her place.
WE are bringing Jalapeno Popper, Mexican 7-Layer Dip with Tortillas & Veggies – and just to be a little different my special Greek Lamb Gyros Meatballs – which are always a big hit!

One of my favorite game day snacks is Veggie Pizza made with crescent roll dough. I just can’t get enough of it!
My favorite is a spinach dip inside a pumpernickel bread bowl.
