Holidays always bring out the creative cook in me, and I like to share that with my friends. If you have been following along, my friends and I had a Country Crock recipe party where we all created several recipes using Country Crock. This one was sure a hit at Christmas when everyone opened their gifts. Using brownie mix and peanut butter chips, the perfect Peanut Butter Chocolate Sandwich Cookies Recipe was created.
Peanut Butter Chocolate Sandwich Cookies Recipe

A delicious peanut butter fudge cookie sandwich
Ingredients
- ½ cup Country Crock Light Spread
- ½ cup light brown sugar
- ¼ cup sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1-1/2 cups flour
- ¼ cup cocoa powder
- ½ t baking powder
- ⅛ t salt
Filling
- ½ cup peanut butter chips
- 1 T Country Crock Light Spread
Instructions
- Heat oven to 375 degrees
- combine ingredients
- shape into ¾ inch balls
- bake 6 to 7 minutes
- remove from baking sheet and cool on a rack
Filling
- Melt peanut butter chips and butter in separate dishes for 1 minute on 70% power
- stir chocolate until smooth
- stir in Country Crock
- Twist the bottoms of the cookies in the peanut butter filling and sandwich together
