Roasted Sweet Pepper Spring Veggies
Recipe type: side dish
  • 1 medium red onion, thinly sliced
  • 2 cups whole grain croutons
  • ¼ cup fresh basil, finely chopped
  • ¼ cup fresh cilantro, finely chopped
  • 1 yellow bell pepper, cut into ½ inch pieces
  • 1 orange bell pepper, cut into ½ inch pieces
  • 1 red bell pepper, cut into ½ inch pieces
  • 1 pint cherry tomatoes, halved
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. extra virgin olive oil
  • ¼ tsp. sea salt
  • ¼ tsp. freshly ground white pepper
  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients in a large mixing bowl; gently toss to combine. Transfer to a roasting pan.
  3. Bake for 20-25 minutes or until vegetables are tender.
  4. Remove from oven.
  5. Serve warm or at room temperature.
