- 2 pounds chicken breast
- 1 can of field peas
- 1 can of roasted tomatoes
- 1 can corn
- fresh basil and oregano
- 1 bag of mixed greens
- radish for garnish
- fresh grated Parmesan cheese
- Put the chicken, peas, tomatoes, and corn in the crockpot on high for 4 hours or until you can shred the chicken.
- Cool chicken mixture and then serve on salad greens
- Garnish with radishes, corn and Parmesan cheese.
